Tasting Notes
Rory: We first made this to kill some bottles before we moved out, and I had to “measure” using a mason jar, but I’ve made it more than a few times since.
Suze, agave, and pineapple are a strong combo that I’ve liked every time I’ve had it; see all the Jungle Bird riffs. This one makes Suze the dominant spirit though, which I really like; the mezcal comes in with some smokiness. (The first time was with Yuu Baal mezcal, which maybe I liked a bit better than the Fidencio here.) I just like the gentian-bitter and sweet together.
The lime is enough to brighten it up without being particularly noticeable. I wonder that the rich simple could be dropped down or eschewed entirely.
Ryan: We invented this one, with some of our last bottles on our way out the door moving out.
It’s a riff on the very common mezcal + Suze + pineapple combination, but this time dominated by the Suze and pineapple. It starts out with a bunch of “rough” notes–Suze modulated by the pineapple juice, I think, nicely emphasized by some of the components in the agave. Later in the sip, the bitterness of the Suze comes forward. The finish stays Suze-forward, but the pineapple fades off into smokiness from the mezcal. Afterwards, it feels like some sweetness lingers.
Recipe
- 2 oz Suze
- 1 oz Mezcal
- 1 oz Pineapple Juice
- 1⁄2 oz lime juice
- 1⁄2 oz rich simple syrup
