Tropical chartreuse

Ryan: This is a pretty simple equal parts cocktail. The substitutions from a Last Word are pretty obvious ones–rum instead of gin, banana liqueur instead of maraschino, yellow chartreuse instead of green.
So unsurprisingly it works pretty well. Banana is the primary note, but the pineapple rum lends a good fruity complexity. The yellow chartreuse seems like the right choice versus the green as well. There’s definitely some depth there from the chartreuse, although in my opinion it takes a little bit of a backseat to the banana? But on the second sip, more herbal notes are forward than banana ones, so I guess they are playing relatively equal roles.
I feel like I want a touch of allspice dram in there as well–something with lots of spice notes and a hint of bitterness.
Rory: Tropical chartreuse. The thing at the front is definitely the heavy herbal chartreuse, but the banane de bresil comes in right after. The pineapple rum is quiet, but I think it makes the banane read as tropical fruits rather than banana.
Ryan suggested adding a dash of allspice dram/bitters, and I can see it working, but I kinda like the - I’m not going to call it pure or clean! It’s got chartreuse in it! - simplicity of just fruit and herbs.
Having said that, it doesn’t have much bitter in it, so I think there might be some bitters appropriate here.
Recipe
- 3⁄4 oz Plantation Stiggins' Fancy Pineapple Rum
- 3⁄4 oz Yellow Chartreuse
- 3⁄4 oz Giffard Banane Du Brésil Liqueur
- 3⁄4 oz Lime Juice
Shake with ice and strain into a chilled coupe.
