Pretty much the exact drink we were looking for

Tasting Notes
Rory: Straightforwardly good. There’s just enough bitter from the suze and a hint of smoke to balance out the sweet from the falernum (smooth) and pineapple (rough). The texture itself is a little cloying & unctuous, but I might be dehydrated Oh, totally dehydrated.
I don’t have a lot to say; it’s pretty much exactly what I wanted.
Ryan: Another Suze jungle bird variant, this time with agave (both mezcal and tequila). This one is pretty sweet, with lots of pineapple at the front. There’s a nice amount of herbal complexity and then the finish is similar to Suze. I think it could stand to have a bit more Suze and some more mezcal too–I wanted more of a smoky note but I can’t really detect that at all. Suze is definitely a shortcut to a nice complex drink with lots of bitterness and herbal notes. I think people use campari for the same thing, but campari drinks don’t usually work for me. Suze drinks do tend to work. All that said, I really do like it as is, I just keep finding myself wanting to make changes.

- 1 1⁄2 oz Blanco tequila
- 1 1⁄2 oz Pineapple juice
- 3⁄4 oz Suze
- 1⁄2 oz John D. Taylor’s Velvet Falernum
- 1⁄2 oz Lime juice
- 1⁄8 oz Yuul Baal Joven Espadin Mezcal
