Suze and tequila continue to play well together

Rory: A little heavy, maybe? It’s close to right. The suze is surprisingly present (at 1/2oz); the tequila recedes but it’s still there. I’m afraid the strawberry flavor of the syrup has faded a little bit. I’m not sure the mezcal is really serving the drink, either.
For a round two, I think I want to drop the mezcal entirely, but I’m not sure what else. The strawberry syrup maybe wants to be upped to 3/4oz (but it’s possible that it just wants to be fresher). I wondered if the lime wanted to be higher, but in the end, I don’t think so.
It’s not coming across in my notes, but I like it - half of it disappeared before I wrote that first paragraph.
Ryan: This is a riff on the Day Trippin', with some inspiration from the Ola Adiós. Our version uses strawberry syrup instead of infused suze, and drops the pineapple and orgeat for a more suze-focused drink. The suze shows through nicely, and the other ingredients play more of a supportive role. The mezcal’s smokiness is a little bit too subtle, so I think we want to increase that somewhat? Or drop it if it’s not helping.
Recipe
- 1.5 oz Cazadores tequila reposado
- 1⁄2 oz suze
- 1⁄2 oz strawberry syrup
- 1⁄2 oz lime
- 1⁄8 oz Yuu Baal Mezcal Espadin
Shake and strain into a double rocks glass over crushed ice. Garnish with a lime wedge.
