Continuing with the suze-pineapple-tequila.

Tasting Notes
Rory: This is probably the simplest Suze riff-on-a-jungle-bird we’ve had. We’ve only had three, which isn’t that many, but maybe more than I would’ve expected for how much I didn’t like the Jungle Bird.
Of the three (vs Ornithologist, Porcelain Bird), it’s using the least Suze. It’s more of a mild bitter note rather than being … well, Suze. It’s pretty close to last night’s, but minus the whiff-of-smoke from mezcal, and even the sweet’s been tempered down (falernum vs simple).
By any means, it’s good, but the Ornithologist was a bit better and more interesting, I think. I liked it plenty; it’s gone before I’ve finished writing these notes.
Ryan: After more tequila + suze + pineapple success yesterday, we went with the baseline elemental version of that combination. It works pretty well! It’s definitely missing a touch of complexity, and the pineapple shows up a lot, but it’s well balanced and really drinkable. I think the summary is mostly that we like suze quite a lot. No real complaints with this drink.
I’d like to find some more interesting combos to go with suze–my favorite so far has been the strawberry Day Trippin'. I think more fruits and syrups would go well as well. For such a strongly flavored liqueur, it’s very versatile and it lends a lot to each drink we make with it.
Recipe
- 2 oz Cazdores Blanco Tequila
- 1 1⁄2 oz Pineapple Juice
- 1⁄2 oz Suze Gentian Liqueur
- 1⁄2 oz Simple Syrup
- 1⁄2 oz Lime Juice
Shake with ice and strain into a goblet or rocks glass over crushed ice.
